It's only Tuesday and I'm already looking forward to the end of the week. I have a very special dinner on Friday to look forward to :). Luckily, I am having some simple thrills as I wait. Do you still get excited when people send you cards and letters via snail mail?
Because I certainly do! Especially when it hails from the beautiful place I called home for five months... Santiago de Chile.
It was from the assistant program director, Isa, replying to the post card that I sent her from Strasbourg. I couldn't have been happier to hear from her. Can you read Spanish? If so you can get the gist of how sweet she is :). I might just send her another one from New York, I don't think she's ever been. I love that I've met such a diverse group of people this past year, but I miss them.
In some ways, though, it is good to be home; because of it I was able to make a spectacular "green monster." I received a package from POM a while ago and still have quite a few left so I used it as the perfect base. Backed by medical research, this very pomegranate juice aids in cardiovascular health, is chock full of antioxidants, and is especially beneficial for men.
I'm glad it tastes so good, too :). I blended everything above plus even more kale for yesterday's yummy morning meal that left me feeling energized and satisfied. I was more than ready to make the same thing this morning as well...
Then my blender broke. No, not broke in the sense that it stopped working... the glass jar literally fell into pieces, three to be exact. According to my mom, there had been a large crack in it for a while, yet I, of course, had never noticed.
As a result, I began my day without a green monster and with two fresh cuts on my thumb and ankle :(. Stupid blender. Ah, well, now we just have to buy a new one! Hope your week is going well, my darlings. Hasta mañana.
