It may only be February 12th but I'm already feeling the love with a Valentine's Day package! My parents sent a card that reads, Even before I held you in my arms, I held you in my heart. That is where you began and where you always will be. I love you. " alongside dark chocolate covered cranberries and some love from across the Atlantic.
As thankful as I am for having this incredibly opportunity to study abroad in two unique and beautiful countries and cultures, it will always be the love in my life that I cherish the most.
On the lovely Thursday I've decided to share a day of eats with you all! It all started with a plate of toast, cheese, clementine, madeleine, and a very special gingerbread and chocolate cookie which I saved for lunch.Plus a small cup of apple sauce on the side. I usually prefer the whole fruit as opposed to the purée but my French host family is a big fan of making homemade blends so I'm enjoying it while I can :).Then, after a long morning at the bilingual school with the kiddies, I rode my bike back to the center to whip up a quick lunch. I'm usually quite hungry without much to work with when I prepare my lunch so this is generally what I make: 2 poached eggs (from the microwave), fresh vegetables from the Sunday market (zucchini and carrots today), and a fruit (Granny Smith apple). With an unpictured, equally fiberous Wasa cracker, lunch was served and in about 5 minutes flat. Yum!As for the final meal of the day, dinner, it began with soup and the best one yet! Btw, this is last night's dinner :) it's only 4.
Followed by a Romaine lettuce salad with tuna alongside,
a soy protein patty and steamed root vegetables (carrots, parsnips, turnips) in a bit of crème fraîche. What a tasty plat du jour!
Next up, a decadent homemade fruit salad (papaya, kiwi, almonds, dates, dried apricots) topped with whipped cream and I ended my day a very satisfied and happy girl! Food can do that sometimes ;).
This picture of my mom, myself, and my sister, Deanna (who turns 14 tomorrow, happy birthday sis!) was taken a week after arriving home from my South American adventure and two weeks before embarking on my European adventure. No matter where I am I hope they always know how much I miss and love them. They're not the only ones either, oh no, I've got so much to go around :) for my brother, my father, my extended family, my friends, my boy, my bloggies (that's you!), my pets and everyone else who has touched my life in the most wonderful of ways, Je t'aime beaucoup aussi. And then, although I sometimes forget how important it is, I love myself, like each person should.
