I was so excited for breakfast this morning. My first bowl of oats of the season! And I used pumpkin for the first time! Oh holy yum! My mom only had rolled oats instead of my usual steel-cut so I made those with water, a dash of salt, vanilla extract, and cinnamon adding in half a banana and two big spoonfuls of pumpkin at the end.
Then I topped it with some Fage (my fav) and peanut butter (my ultimate fav). I was very pleased :). I just realized I forgot to add my usual flax seed but I don't think it made much of a difference... it's been 3 hours and I'm still happily satisfied. Love that. A morning bowl of oats is the best, and very deserving of more than one picture.
I'm helping my mom this week with her day care kids so that would be why there was a delay this morning... just came from our library's story hour with the 3-year-olds. Sooo cute! I spent my time wisely too and found three great books: Michael Pollan's In Defense of Food, Lost paradise by Ceese Nooteboom, and The monk downstairs by Tim Farrington. Can't wait to dig in! ONE WEEK 'TIL CHRISTMAS! :D
