Hello blogworld, I'm glad that my "Hakuna Matata" singing was able to brighten some of your blah-Wednesday blues! Goal accomplished :) and it worked for me too! With my optimism I tried my first evening workout last night. It was... okay, although my "mom" chose to refer to it as spectacular, lol. We ran along Pocuro, my usual path and I got to watch the sun set as opposed to rising. I still prefer the mañana.
Yesterday afternoon was a whirlwind of errands with the host-mom. So much so that we didn't get home until 6:30 and without anything to show for dinner! I quickly chopped some veggies, cucumbers, tomatoes, and mushrooms, for our ensalada, while she made our pasta dish. We had fettucine noodles with the usual tomato, basil, and soy meat crumbles sauce. Delish! And then, I'm not one to toot my own horn, but my salad that followed was incredible! Seriously, maybe it was the freshness of the veggies or my quick EVOO, Chilean red wine vinegar, and oregano dressing but wow. We made a pretty good team! I got to bed fairly early last night and woke up before my alarm. Don't you love it when that happens? I was able to take my time getting ready, the best way to start any day. Then I went to the cocina for coffee and my brekkie sandwich: peanut butter, flax, and banana on fresh bread. PB & banana is my all-time favorite pairing... okay, obvious, but I cannot imagine not knowing how well these two are made from each other :). Any other fav food couples?
Plus, it also sticks with me forever! Today I went to a really tough Body Balance class and then made up for a run that I had missed last week, almost 2 hours of exertion, and I walked out of the gym without a growling tummy or that weak feeling I get when my body needs energy. Amazing. I did snack on 2 clementines on my walk home though... and they were yummy and refreshing :). After a shower I put together this simple lunch: smoked salmon, tomato, avocado, and lettuce. It was good and light and just what I felt like I needed on this humid day! Now I've got to write an essay (blah) about humor across cultural lines and in Spanish. Huh?! Yeah, I know. Ha, let's hope I get inspired soon! Enjoy the rest of your Thursday mis amigas espectaculares!
