¡Hola chicas! Ahh, I'm so sorry for the temporary and unannounced blog hiatus! I've been working tirelessly on an obscene amount of work and I was only able to fit in the occasional break to check on your blogs, not update my own. Also, just so you know, I probably didn't have time to comment, but I've been reading :). We have a lot to catch up on so I'm going to try to keep the dialogue to a minimal. Now for the visual overview of the delectable food that's been fueling me these days...
I went on a field trip to Villa Grimaldi Friday afternoon so I had to pack a lunch. These salads were the perfect antidote to a heavy visit- lettuce, beets, avocado, onions, tomato, cucumbers, and 2 hard-boiled eggs with Chilean vinegar. Tasty and filling!
Good thing, because that night I went food shopping with my "mom" and seeing as we had just bought fresh bread, we decided that an once dinner was in order. I had 3 halves of bread with fresh goat cheese, and pebre. The combination was delicious!
I woke up early the next day, had brekkie, went for a great run, showered, tidied up my room and then was ready to eat again. For lunch we had an amazing chicken combo of spicy (peppers) and sweet (corn). I didn't eat much rice but I did finish up the meal with a serving of Ensalada de Lechuga. And then I as off again, study session at Starbucks with a friend.
I got home around 6 that evening to hear that my "dad" was taking the kids for KFC. Yuck. My "mom" and I finished up the rest of the real chicken with salads. There was some avocado, tomato, cauliflower, and lettuce on my plate. Yum again! Later that night I went discoteca-hopping with friends, love bringing fun and exercise together ;).
Sunday was extra-special because we got in 2 more fillets of fresh salmon! For lunch my "mom" drizzled it with a little EVOO and salt, put it in the oven, and then I topped it with some fresh-ground pepper...scrumptious. We started with a plate of salads, followed by my favorite fish and a Puree de Papas. Dinner was a repeat!
And yesterday's lunch was even more salmon and salads! You think I'd get enough but no... and I couldn't have chosen a better daily staple. According to the World's Healthiest Foods: Salmon, and other cold-water fatty fish are considered "brain food," not only because of their ability to navigate hundreds of miles to return ot ehir birthplace to spawn, but because of their high concentration of omega-3 fats. For brain cells to function property, structural fat (more than 60% of the human brain) needs to be primarily omega-3 fats... such as EPA found in salmon. This is because the membranes of all our cells are primarily composed of fats. And omega-3 fats, which are especially fluid and flexible, maximize the cell's ability to usher in nutrients while eliminating wastes-- definitely a good idea, especially when the cell in question is in your brain.
Considering I've been so diligent with both my academics and my running routine I decided yesterday that I deserved a little treat. After my Spanish class I stopped by my favorite natural food shop and bought some organic Venezuelan chocolate. Delicious dessert :).
Monday night's dinner was the return of Pantruca. Mmm, so good as usual, and supplemented with salads of lettuce and cabbage. Alrighty, I've got to get back to the grind, I think I'm headed to my nook in Starbucks again. Lol, it never ends! I'll do my best to post more frequently this week.
